Excellent Sweet Potato Hash Recipe
I love sweet potato’s, they are one of nature’s most perfect (and inexpensive) foods.
I do this recipe a little differently than the directions in that I prepare the whole thing in one electric skillet. I don’t have time to make a big mess in the kitchen, so I start cooking the sweet potato’s, then cut everything else and throw it in.
The only other things I do different are using olive oil rather than canola oil (it’s just what I have in the kitchen), and I also like to add green onion and some diced red peppers (if I have some).
The best part of this recipe is that I can make more than I’ll eat, then save the rest for another time, so I really get 2 (or 3) dishes from that one meal.
